Pão de Ló means “sponge bread” in Portuguese — a name that perfectly captures this traditional cake’s beautifully light and airy texture. Made only with eggs, sugar, and flour, and gently scented with lemon, it’s finished with a dusting of icing sugar.

It’s one of Portugal’s oldest and most beloved cakes, enjoyed during Easter and Christmas — similar in spirit to a génoise or chiffon sponge, but with a distinct Portuguese touch of simplicity and softness. Naturally fat-free and utterly timeless.
